Cinnamon Spiced Apple Bread

INGREDIENTS

  • 2 large baking apples, peeled

  • 2 tablespoons granulated sugar

  • 1/2 cup brown sugar

  • 1/4 teaspoon fine sea salt

  • 1 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger

  • 1/4 teaspoon freshly grated nutmeg

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 cup neutral oil (vegetable or grape seed)

  • 2 large eggs, lightly beaten

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon almond extract, optional

INSTRUCTIONS

  • Center a rack in the oven and heat to 350. Add butter and flour an 8 1/2 inch by 4 1/2 inch loaf pan or line with parchment paper and lightly grease with oil.

  • Peel and core the apples, then use a box grater to shred them. Add the shredded apples to a large bowl.

  • Add the granulated sugar, brown sugar, salt, cinnamon, ginger and nutmeg to the apples and mix well. Set the bowl aside for 10 -15 mins. As they sit, the apples will release quite a bit of liquid.

  • While the apples sit with the sugar and spices, prepare the dry ingredients. In a medium bowl, whisk the flour, baking soda and baking powder together.

  • When the apples are ready, stir in the oil, beaten eggs, vanilla and almond extract until well blended.

  • Use a large rubber spatula to scrape the sides and bottom of the bowl, then add the dry ingredients in 3 parts, stirring gently until they disappear. Pour in nuts.

Roasted Red Cabbage

INGREDIENTS

  • 1 head JFS Altius Farms red cabbage

  • 2 tablespoons olive oil

  • 1 tablespoon balsamic vinegar

  • 1/2 teaspoon honey

  • 1 teaspoon whole grain mustard

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Pinch of red pepper flakes

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon chopped JFS Altius Farms parsley

INSTRUCTIONS

  • Preheat the oven to 400 degrees F.

  • Trim the bottom off the cabbage and cut it in half lengthwise. Then cut it into 1/2-inch-thick slices.

  • In a medium bowl, whisk together the olive oil, balsamic vinegar, honey, mustard, garlic powder, onion powder, red pepper flakes, salt and pepper. If possible, it helps to do this in a wide shallow bowl with a flat bottom.

  • Dip each cabbage slice on both sides in the marinade. Place the slices on a sheet pan in a single layer. They should not be touching or overlapping.

  • Roast the cabbage for 20-25 minutes until browned in spots and caramelized at the edges.

  • Sprinkle with parsley before serving.
