Our Culinary Mushrooms

 3 easy ways to cook mushrooms  

Test your culinary skills with these easy recipes for our lions mane, king trumpet, and blue oyster mushrooms, all locally grown at JFS Altius Farms and packed with flavor, nutrition, and benefits for your health and the planet. 

Simple Sauté - for all varieties

  • Slice mushroom caps and stems into uniform pieces  

  • Heat a pan with a little oil or butter  

  • Add mushrooms, a pinch of salt, and cook on medium heat until golden brown (about 5–7 minutes)  

  • Add garlic or herbs if you have them!  

Lion’s Mane “Crab” Cakes

  • Tear mushrooms into small pieces and sauté for 5 minutes  

  • Mix with 1 egg, breadcrumbs, a little mayo or mustard, and seasoning (like Old Bay or garlic powder)  

  • Form into patties and pan-fry in butter until golden (3–4 min each side)  

King Trumpet “Scallops”

  • Slice thick stems into 1-inch rounds  

  • Sear in oil or butter for 2–3 minutes per side until golden  

  • Splash with a bit of soy sauce or lemon juice before serving
